At about 4:35 PM yesterday I created the leaven for the final baking process of the sourdough bread. The culture I took from had a sour milk smell to it. I did the initial float test at about 2:29 PM and had a negative result. I proceeded to try again at 5:32 PM which proceededContinue reading “Day 22”

Day 18
2:35 PM – New culture batch was transferred into bowl, no visual occurrence of fermentation on the initial refrigerated culture. 3:35 PM – New culture starts to settle down within container showing about 1/8 contraction of its original size. No gas bubbles 4:35 PM – Slightly more contraction has taken place, possibly 1/4 of theContinue reading “Day 18”
Day 14
I noticed more gas bubble formation with three distinct bubble spots on the bottom the clear bowl and one spot on the top of the culture itself. The smell does not seem to be too significant and no major discoloration of the top layer.
Day 12
There is little signs of growth on this transfer today. The top layer was particularly thick and had slightly solidified. No gas bubble formation
Day 10
Very slight changes in the growth of my cultures. I did notice one single gas bubble of this culture in particular.
Day 8
As I continue the repetition of growing my culture I’m noticing no change in smell, consistency, or color that would determine a growth in the culture. I am unsure if there is an analytical error in my process or area that I am keeping my culture, or it is actually growing and I am justContinue reading “Day 8”
Day 6
Culture continues to grow. my bowl must have been moved in the refrigerator because the culture moved to the side of the bowl which shouldn’t be an issue but there isn’t a distinct change in color as before stated. I continued to transfer my culture into a now smaller clear bowl.
Day 5
The culture appears to be less dehydrated as before. There are more prominent dark cultures this time with a distinct rotting flour batter smell. This means there’s more growth.
Day 4
I noticed very minimal gas bubble formation. The crust layer contained a relatively darker shade of color from the rest of the entire batch. It was also easier to take off then the other parts. The smell was kind of like the original flour mix but with a more rotten hint to it, difficult toContinue reading “Day 4”
Day 3
There seems to be minuscule gas formation at the base of my culture, I’m not sure if it is because my refrigerator is too cold. Nonetheless I do see dark discoloration towards the center of my culture.
