2:35 PM – New culture batch was transferred into bowl, no visual occurrence of fermentation on the initial refrigerated culture.

3:35 PM – New culture starts to settle down within container showing about 1/8 contraction of its original size. No gas bubbles

4:35 PM – Slightly more contraction has taken place, possibly 1/4 of the original mixture for the day. very slight gas bubbles of fermentation presenting

5:35 PM – The culture no longer shows many flour chunks, very little to no bubbles of gas formations. Slight change in expansion process in the center of the culture.

6:35 PM – Slight expansion occurring within the culture, possibly 1/8 from its original size. No observable fermentation, possibly underneath the surface inside the mixture.
